At our meeting today, our theme was Breakfast in the Afternoon. We had a great turnout, best ever with 13 attendees. The dishes we sampled were:
Tofu quiche with basil and mushrooms
Pumfu squares (Pumfu is like tofu but made from pumpkin seeds)
Spicy bean soup
Homemade bagels, fresh out of the oven
Omelet with spicy bean fillings
Black bean sweet potato burgers with sriracha sauce and avocadoes
Breakfast oatmeal bites
Peanut butter banana bars
Chocolate mousse, made with silken tofu
Fruit salad
The food was spectacular and sparked energetic conversation. Thanks to all who attended.
